This is a traditional sauce prepared with fried calf meat or beef, onions, carrots and olive oil.
It has nothing to do with the city of Genova or Liguria, it's a Neapolitan dish!
The origins of Its name, Genovese, are ambiguous: some says that this sauce always put on pasta could be invented in Naples by immigrants from Genova but, according to others, it derives from the surname Genovese which is very common in Naples.
We actually don't figure out what is the truth but what does it matter?
The important is la Genovese exists!
